Classic Minestrone and Italian Panzanella

One of my healthy lifestyle strategies is volunteering to cook for social gatherings.  When ladies get together for crafting groups, Bunco, book club, and parties the food is often decadent and delicious and really bad for you if you don't have something healthy to go along with it to provide some moderation.

This week I volunteered to cook for my scrapbooking group.  I took Classic Minestrone and Italian Panzanella, both from Martha Stewart's Everyday Food.  Temperatures were in the single digits so the soup hit the spot and the bread salad was something unique that many of the ladies hadn't heard of.

My bread was really soft and fresh so I drizzled it with a little olive oil and toasted it at 350 F for about 10 minutes.

I left some bowls of soup and salad for Kenny and Sophia to have for their dinner.  Sophia doesn't usually care for spicy food but this time she said, "Daddy the soup is a little spicy but I really like it."  She finished her bowl and ate some of his.
