What's Cooking? - Kindergarten Cookies

Kindergarten Cookies (No-bake 0at-chocolate)

1 1/2 cups sugar
1/4 cup cocoa
1/2 cup milk
1/2 cup butter
1 teaspoon vanilla
Pinch salt
1/2 cup peanut butter
3 cups quick-cooking oats

Place sugar, cocoa, milk, butter, vanilla, and salt in medium saucepan. Bring to rolling boil. Cook 1 minute. Remove from heat. Add peanut butter and oats. Drop from spoon onto waxed paper.

Makes 5 to 6 dozen.

Sophia Update - Sophie Uses a Spoon

Sophie won't let me feed her lately. She wants to do it herself. I put food on a spoon and she puts the spoon in her mouth. It's a little bit of a hassle because she still likes to wave the spoon occasionally which makes a big mess. She does best with sticky foods like oatmeal that hang onto the spoon even if she waves it.

Sophia Update - Big Day Out

Sophie and I had a big day out the other day. She was such a good girl. We didn't come home until I got tired.

I had to take my sewing machine to be serviced, so we left home about 8:30 am. It was about a two hour drive down the hill to the shop. Sophie slept pretty much the whole way. We dropped off the sewing machine and then went to Soup Plantation for lunch. I really like taking Sophie there because I can get her a big variety of food and she can choose what she wants to eat. Her favorites this time were raisins, kidney beans, and cheese, but she ate lots of other things too. After lunch we went to a health food store where we picked up some veggie food and healthy cereal bars. Then we went to Trader Joe's like we always do when there's one in the vicinity. So, after we had lunch and did all of our grocery shopping we went to pick up the sewing machine. We immediately made our escape back up the hill. It would have been nice to spend more time in civilization but I didn't want to get stuck in traffic. We made several more stops back up the hill...the mall, Target, Costco, the Gap Outlet. Then it was time to drive back home. Sophie fussed very little during the entire day. I enjoyed her company.

What's Cooking? - Black Bean and Corn Salad

Black Bean and Corn Salad

I made this recipe for the first time on the Forth of July 2001. I had just arrived in Stuttgart, Germany and I needed something to take to a BBQ. I didn't have any of my recipes or any dishes. I found this recipe on the internet and had to buy a bowl to mix it in. It has since become a favorite because it tastes yummy and looks pretty.


1/3 cup fresh lime juice about 4 limes
1/2 cup olive oil
1 clove garlic, minced
1 teaspoon salt
1/8 teaspoon ground cayenne pepper
2 (15 ounce) cans black beans, rinsed and drained
1 1/2 cups frozen corn kernels
1 avocado - peeled, pitted and diced
1 red bell pepper, chopped I used green to add color since the tomatoes add a lot of red
2 tomatoes, chopped I used a handful of grape tomatoes, quartered
6 green onions, thinly sliced I leave out
1/2 cup chopped fresh cilantro

Place lime juice, olive oil, garlic, salt, and cayenne pepper in a small jar. Cover with lid, and shake until ingredients are well mixed. I just whisk together in a bowl.

In a salad bowl, combine beans, corn, avocado, bell pepper, tomatoes, green onions, and cilantro. Shake lime dressing, and pour it over the salad. Stir salad to coat vegetables and beans with dressing, and serve.

What's Cooking? - Peperonata

Peperonata (Braised Sweet Pepper Stew)

This dish reminded Kenny of Lecso which is a Hungarian stew. He suggested adding some veggie meat to the recipe next time for more substance.

6 sweet (bell) peppers, red, yellow, and green
2 medium yellow onions, halved and thinly sliced
3 tablespoons extra virgin olive oil
Salt and freshly ground black pepper to taste
3 ripe medium tomatoes, peeled, seeded, and chopped I used a can of petite diced tomatoes and a can of tomato sauce

Cut the peppers in lengthwise strips about 3/4 inch wide, discarding cores, seeds, and white membranes.


In a saucepan large enough to hold all the ingredients, gently saute the onion slices in the oil over medium-low heat until the onion is soft and golden but not brown, about 10 minutes. Add the pepper slices with a little salt and pepper to taste, cover the pan, and cook for about 20 minutes, or until the peppers are soft and just starting to brown. Remove the cover and raise the heat slightly to medium or medium-high. Stir in the chopped tomatoes and continue cooking, stirring frequently, an additional 10 minutes, or until the tomatoes are just starting to break down into a sauce. If the tomatoes release a great deal of water, raise the heat to high and cook rapidly, stirring constantly, until the juices are reduced.

Serve immediately or allow to cool to room temperature.
